The use of spices and vegetables is completely optional and if you do not like it just make it simple. The addition of virgin olive oil gives your tomato paste a great taste, so don't forget.

5. Cook the tomatoes over low heat and stir occasionally and shake the pot to prevent it from sticking. It evaporates over time and the paste thickens. Baking for a long time makes tomato paste more durable.

6. If you want to caramelize your tomato paste, you should put the paste in the oven tray. Of course, this step is completely optional and you can cook it all in the traditional way on the stove.

7. When the paste has reached its desired consistency, add salt to the ingredients. Then let cool and place in a glass container.

Tip: If you put a little olive oil on the surface when you put the paste in glass containers, you increase their shelf life. This way you don't need to keep the paste in the fridge and keep it for up to a year.
