Mirza Ghasemi is one of the most popular and authentic cuisine of Guilan province which is very popular in all cities of Iran due to its special taste. Of course, because Mirza Qasemi is cooked with smoked eggplant, some people don't like it.


Ingredients

Eggplant 2 medium
Tomatoes; medium size

Garlic;
Tomato paste; tbsp
Enough oil and turmeric
Enough salt and black pepper

Cooking recipe

first stage

First we have to grill the eggplants, so we can use a stove or charcoal flame. (Traditional Rasht restaurants use charcoal to grill eggplants) We have to grill the eggplants well enough to completely burn the eggplant skin.
second stage

Of course, if you do not like the smoky taste of grilled eggplant you can cook the eggplant in a boiled form. After the eggplants are finished roasting, allow to cool slightly, then gently peel off.
third level

After the peeled eggplants, cut into a large bowl, then crush them thoroughly with meat to separate the texture. Next, remove the eggplants and prepare the tomatoes.
Step Four

Put the tomatoes in a pot of boiling water for 5 minutes to remove the skin. After 5 minutes remove the tomatoes from the boiling water and remove the skin after they have cooled slightly.
Step Five

Put a pan on the heat and add some oil. Next, grate the garlic and saute in a little oil until light and light, add some turmeric to the garlic and saute until garlic is uniform.
Step Six

At this point, add the eggplants and sauté for about 5 minutes, then add the tomatoes to a very fine or grated pan and saute well until the extra water of the tomatoes evaporates and Mirza Ghasemi To fall into the oil.
Step Seven

Adding tomato paste to Mirza Ghasemi is optional, but if you want a better taste and color for Mirza Ghasemi, you can add 2 tablespoons of tomato paste to Mirza Ghassemi at this point. Roast the tomato paste until it is completely fried.
Step Eight

At this point, we gather the Mirza Qasemi ingredients on one side of the pan, then break the eggs into the empty pan and mix well with the other Mirza Qasemi ingredients until they are completely uniform. Finally, measure the salt and pepper of Mirza Qasemi and allow it to cool slightly.
Step Nine

To decorate Mirza Qasemi, you can cook an egg in a separate pan in a round mold then place the scrambled egg on Mirza Qasemi after you draw Mirza Qasemi on a plate.
Tips to improve Mirza Qasemi
Grilling eggplant

If you want your eggplant to taste smoky, be sure to grill the eggplant on the charcoal or stove flame because roasting the eggplant in the oven makes it smell not smoky. Of course, those who like to make eggplants grilled but do not like the smell of eggplant can use the oven to grill eggplants.
Use tomato paste

Some cooks find adding tomato paste to Mirza Qasemi a mistake because they believe that adding tomato paste destroys the original taste of Mirza Qasemi and causes Mirza Qasemi to taste tomato paste. Of course, I disagree with this because tomato paste not only gives Mirza Qasemi a better taste, it also makes Mirza Qasemi more pleasant. You can also remove the tomato paste from the recipe if you wish.
