South okra stew Recipe

Okra stew is one of the delicious and authentic Iranian food that is considered one of the Majestic stews of the southern provinces of the country. Okra stew is one of the stews that have been known only in the southern provinces for many years. Nowadays, this dish is made with different methods and foods. For example, some people add it to the cotyledon stew or make it with white meats like chicken.



Ingredients


Okra 5 g

Stewed meat 2 grams

Medium onion;

Garlic;

Tomatoes, 2 pcs

Tomato paste; tbsp

Salt and black pepper as needed

Turmeric and oil as needed

Lemon or sourdough as desired

Cooking recipe for okra


first stage

First chop the onions and garlic into a small skillet, then fry with a little oil in a pan to cook the okra stew to make it translucent and soft. Add a little turmeric to the garlic and onion mixture and continue to sauté until garlic and onion are completely uniform.

In the next step, wash the stewed meat and then chop it into a grater (like a vegetable stew). Keep in mind that meat should be crushed on a medium scale, because small or large pieces of meat have a negative effect on the appearance of the stew, as well as the size of the meat being cooked later. After you have cut the stewed meat, add it to the stew pot and sauté it with garlic and onions to change the color of the meat. Just change the color of the meat because if you over-fry the meat it may become stiff and long.

Next, peel the tomatoes and grate them. Next, add the grated tomatoes to the pot with the tomato paste and saute for a bit until the raw taste and smell of the tomato paste is achieved. Tasting the paste will make you more palatable at the end.

Step Four

At this point, add 2 cups of water to the pot and heat it down to boil the water faster. After the water has boiled, reduce the heat to the bottom of the pot to cook the meat slowly. Like other Iranian stews, okra will taste better if cooked slowly and with more time.

Step Five

When cooking meat, remove the okra and be careful not to damage the okra texture. Just remove the okra head and tail. If the body of okra is opened, it will negatively affect the appearance of the sun.

Step Six

At this point, gently scrub the okra after washing and drying each month with a little oil to change the color slightly. Frying okra is just because they do not lose their appearance when cooking the stew.

Step Seven

About two hours after the meat is fully cooked, add the okra to the stew pot. At this point, you can add a little lemon juice or sourdough to taste, along with salt and black pepper.

Step Eight

Allow the stew to heat for another 5 to 5 minutes to thicken and cook until the okra is cooked through. Okra stew is one of the stews that should be served with low water. Another important thing about this stew is that if the stew is left in the pan after adding the okra to the pot, the okra will crumble and ruin the appearance of the stew. Finally, serve with pilaf after the okra stew is gone.
